Description

  • 3/4 cup pure maple syrup
  • 1/3 cup light brown sugar, packed
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 3 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. In a medium saucepan, whisk together the maple syrup, brown sugar, cornstarch, and salt.
  2. Gradually whisk in the milk and egg yolks until fully combined and smooth.
  3. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil, about 7-10 minutes.
  4. Remove from heat. Stir in the butter and vanilla extract until the butter is melted and the filling is smooth.
  5. Pour the maple cream filling into the prepared pie crust. Smooth the top and let cool to room temperature, then refrigerate for at least 1 hour until set.
  6. Whip the heavy cream with powdered sugar until soft peaks form. Spread or pipe whipped cream over the chilled pie before serving.
