- 3/4 cup pure maple syrup
- 1/3 cup light brown sugar, packed
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 cups whole milk
- 3 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
Instructions
- In a medium saucepan, whisk together the maple syrup, brown sugar, cornstarch, and salt.
- Gradually whisk in the milk and egg yolks until fully combined and smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil, about 7-10 minutes.
- Remove from heat. Stir in the butter and vanilla extract until the butter is melted and the filling is smooth.
- Pour the maple cream filling into the prepared pie crust. Smooth the top and let cool to room temperature, then refrigerate for at least 1 hour until set.
- Whip the heavy cream with powdered sugar until soft peaks form. Spread or pipe whipped cream over the chilled pie before serving.
