Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1 large egg
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 cup powdered sugar
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  2. In a large bowl, combine flour, granulated sugar, and salt.
  3. Add cubed butter and mix until it resembles coarse crumbs.
  4. Set aside 3/4 cup of the crumb mixture for topping.
  5. Press the remaining crumb mixture into the prepared pan for the crust.
  6. In a separate bowl, whisk together egg, lemon zest, lemon juice, powdered sugar, and vanilla extract until smooth.
  7. Pour the lemon mixture over the crust.
  8. Sprinkle the reserved crumb mixture on top.
  9. Bake for 30-35 minutes, until golden and set.
  10. Allow to cool completely before cutting into bars.
