Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.

- Add cubed butter and mix until it resembles coarse crumbs.
- Set aside 3/4 cup of the crumb mixture for topping.
- Press the remaining crumb mixture into the prepared pan for the crust.
- In a separate bowl, whisk together egg, lemon zest, lemon juice, powdered sugar, and vanilla extract until smooth.
- Pour the lemon mixture over the crust.
- Sprinkle the reserved crumb mixture on top.
- Bake for 30-35 minutes, until golden and set.
- Allow to cool completely before cutting into bars.
