- 2.5 cups All-Purpose Flour
- 2 tablespoons Cornstarch
- 0.5 teaspoon Table Salt
- 2 cups Powdered Sugar
- 2 tablespoons Fresh Lemon Juice (freshly squeezed is ideal)
- 0.5 tablespoon Light Corn Syrup (optional for shiny glaze)
Instructions
- In a mixing bowl, cream together unsalted butter and granulated sugar, along with lemon zest, until the mixture is light and fluffy, about 2-3 minutes.
- Mix in the large egg and pure vanilla extract until everything is well incorporated.
- Pour in the whole milk and mix thoroughly.
- In a separate bowl, whisk together all-purpose flour, cornstarch, and table salt. Gradually add this to the wet mixture in three additions at low speed.
- Roll out the cookie dough between sheets of parchment paper to about 1/4 inch thick. Cover and chill for 60 minutes.
- Preheat your oven to 375°F (190 °C). Cut the chilled dough into desired festive shapes and chill again for 10 minutes.
- Bake for 8-11 minutes, or until the edges are lightly golden brown. Let cool on the pan for about 5 minutes.
- For the glaze, whisk together powdered sugar, whole milk, fresh lemon juice, and optional light corn syrup until smooth.
