- 1/4 cup coconut flour
- 1/4 cup granulated erythritol or monk fruit sweetener
- 1 tsp baking powder
- 1/4 tsp xanthan gum (optional)
- 1/4 cup unsalted butter, melted
- 1/2 tsp vanilla extract
- 8 oz cream cheese, softened
- 1 large egg
- 2 tbsp granulated sweetener (adjust to taste)
- 1/2 tsp vanilla extract
- 2 cups fresh strawberries, sliced
- 1/4 cup granulated sweetener
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix the cobbler base ingredients until combined.
- In another bowl, beat the cream cheese filling ingredients until smooth.
- In a separate bowl, toss strawberries with sweetener and let sit.
- Spread half of the cobbler batter in a greased baking dish.
- Layer the strawberries on top, then dollop the cream cheese mixture over the strawberries.
- Spread the remaining cobbler batter on top.
- Bake for 30-35 minutes until golden and set.
- Cool for 10-15 minutes before serving.
