- 2 cups cooked chicken breast, diced
- 3/4 cup cottage cheese
- 2 jalapeno peppers, seeded and finely chopped
- 1/2 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 3 tablespoons mayonnaise
- 2 green onions, sliced
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine cottage cheese and mayonnaise. Stir until creamy and smooth.
- Add diced chicken, chopped jalapenos, shredded cheddar cheese, crumbled bacon, and green onions to the bowl.
- Season with garlic powder, salt, and pepper. Gently fold all ingredients together until well combined.
- Chill the salad for at least 10 minutes to allow flavors to meld. Serve cold as a salad or in lettuce wraps.
