Description

A creamy, zesty chicken salad inspired by jalapeno poppers and made keto-friendly with cottage cheese, diced chicken, crispy bacon, and cheddar cheese. Perfect for lunch or a light dinner.


Ingredients

  • 2 cups cooked chicken breast, diced
  • 3/4 cup cottage cheese
  • 2 jalapeno peppers, seeded and finely chopped
  • 1/2 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 3 tablespoons mayonnaise
  • 2 green onions, sliced
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine cottage cheese and mayonnaise. Stir until creamy and smooth.
  2. Add diced chicken, chopped jalapenos, shredded cheddar cheese, crumbled bacon, and green onions to the bowl.
  3. Season with garlic powder, salt, and pepper. Gently fold all ingredients together until well combined.
  4. Chill the salad for at least 10 minutes to allow flavors to meld. Serve cold as a salad or in lettuce wraps.
