Description

Kashmiri Pink Chai is a creamy, spiced beverage that transports you to the Himalayas with its enchanting flavors.


Ingredients

  • 2 cups Water
  • 2 tbsp Kashmiri/Himalayan green tea
  • 1/2 tsp Baking soda
  • 12 pieces Star anise
  • 2 pieces Crushed cardamom pods
  • 1 stick Cinnamon stick
  • 1/4 tsp Salt
  • 2 cups Whole milk
  • to taste Sugar or honey
  • Crushed nuts (e.g., almonds)

Instructions

  1. Boil Water: Bring a pot of water to a gentle boil. Once bubbling, add 2 tablespoons of Kashmiri green tea and allow it to simmer for 5 minutes.
  2. Add Baking Soda: Stir in 1/2 teaspoon of baking soda, watching as the color transforms to a deep red. Continue boiling for 2 minutes.
  3. Mix in Spices: Add 1-2 pieces of star anise, 2 crushed cardamom pods, and 1 cinnamon stick. Let these infuse for 1 minute.
  4. Simmer: Lower the heat and allow the mixture to simmer for 20-30 minutes to deepen flavors.
  5. Incorporate Salt and Milk: Stir in 1/4 teaspoon of salt and then add 2 cups of whole milk, bringing to a gentle boil.
  6. Strain: Once transformed into a pink delight, strain the chai into cups, catching whole spices.
  7. Sweeten and Garnish: Add sugar or honey to taste and garnish with crushed nuts if desired.
