Ingredients

- 2 tbsp Kashmiri/Himalayan green tea
- 1/2 tsp Baking soda
- 1–2 pieces Star anise
- 2 pieces Crushed cardamom pods
- 1 stick Cinnamon stick
- 1/4 tsp Salt
- 2 cups Whole milk
- to taste Sugar or honey
- Crushed nuts (e.g., almonds)
Instructions
- Boil Water: Bring a pot of water to a gentle boil. Once bubbling, add 2 tablespoons of Kashmiri green tea and allow it to simmer for 5 minutes.
- Add Baking Soda: Stir in 1/2 teaspoon of baking soda, watching as the color transforms to a deep red. Continue boiling for 2 minutes.
- Mix in Spices: Add 1-2 pieces of star anise, 2 crushed cardamom pods, and 1 cinnamon stick. Let these infuse for 1 minute.
- Simmer: Lower the heat and allow the mixture to simmer for 20-30 minutes to deepen flavors.
- Incorporate Salt and Milk: Stir in 1/4 teaspoon of salt and then add 2 cups of whole milk, bringing to a gentle boil.
- Strain: Once transformed into a pink delight, strain the chai into cups, catching whole spices.
- Sweeten and Garnish: Add sugar or honey to taste and garnish with crushed nuts if desired.
