Description

Ingredients

  • 1 cup cashews (plain, unroasted)
  • 0.5 cup sugar
  • Water (just enough to cover sugar)
  • Ghee or Coconut Oil (optional, for greasing)
  • Rose petals, rose water, or saffron (optional, for flavor)

Instructions

  1. Grind 1 cup of cashews into a fine powder using a grinder. Be careful not to overprocess.
  2. In a thick-bottomed pan, combine 0.5 cup sugar with just enough water to cover it completely.
  3. Stir the sugar and water mixture over low heat until the sugar dissolves.
  4. Add the ground cashew powder to the pan.
  5. Stir continuously over low heat for 7-9 minutes until the mixture thickens and forms a soft dough that leaves the sides of the pan.
  6. Quickly remove the mixture from the heat and place it on a greased surface (using ghee or coconut oil).
  7. Gently knead the hot dough until it becomes smooth.
  8. Roll out the dough on parchment paper to a thickness of about 3-5 mm using a rolling pin.
  9. Allow the rolled-out dough to cool completely.
  10. Cut the cooled dough into squares or diamond shapes using a sharp knife.
  11. Garnish with finely chopped pistachios if desired.
  12. Transfer the Kaju Katli into an airtight container for storage or serve immediately.

  • Use plain, unroasted cashews for the best texture.
  • Do not overprocess the cashews when grinding.
  • Stir the mixture constantly during cooking to ensure a smooth consistency.
