Instructions
- Grind 1 cup of cashews into a fine powder using a grinder. Be careful not to overprocess.
- In a thick-bottomed pan, combine 0.5 cup sugar with just enough water to cover it completely.
- Stir the sugar and water mixture over low heat until the sugar dissolves.
- Add the ground cashew powder to the pan.
- Stir continuously over low heat for 7-9 minutes until the mixture thickens and forms a soft dough that leaves the sides of the pan.
- Quickly remove the mixture from the heat and place it on a greased surface (using ghee or coconut oil).
- Gently knead the hot dough until it becomes smooth.
- Roll out the dough on parchment paper to a thickness of about 3-5 mm using a rolling pin.
- Allow the rolled-out dough to cool completely.
- Cut the cooled dough into squares or diamond shapes using a sharp knife.
- Garnish with finely chopped pistachios if desired.
- Transfer the Kaju Katli into an airtight container for storage or serve immediately.

- Use plain, unroasted cashews for the best texture.
