Description

Kafta Kebabs are tender, spiced meat skewers grilled to perfection. They feature a flavorful blend of ground beef or lamb with fresh herbs like parsley and cilantro, and aromatic spices such as cumin, allspice, and coriander. This easy-to-follow recipe delivers restaurant-quality results with a smoky aroma and juicy interior, making them ideal for BBQs and Middle Eastern-inspired meals.


Ingredients

  • 1 lb ground beef (or lamb)
  • 1 medium onion, finely grated
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground coriander
  • Salt and pepper, to taste
  • 1/4 cup olive oil (for grilling)

Instructions

  1. In a large bowl, combine the ground beef (or lamb), grated onion, minced garlic, parsley, cilantro, cumin, allspice, cinnamon, coriander, salt, and pepper.
  2. Mix well using your hands or a spoon until all ingredients are evenly combined.
  3. Shape the meat mixture into long kebabs, approximately 4 to 6 inches in length and about 1 inch in thickness. You can form them by hand or mold them onto skewers.
  4. Preheat the grill or grill pan over medium-high heat and lightly brush the kebabs with olive oil to prevent sticking.
  5. Grill the kebabs for about 8-10 minutes, turning occasionally, until they are browned on all sides and fully cooked through.
  6. Remove from the grill and let rest for a few minutes before serving.

Notes

  • For a spicier flavor, add a pinch of red pepper flakes to the meat mixture.
  • Ensure the meat is evenly distributed on the skewers for consistent cooking.
  • Do not overcook the kebabs to maintain their juiciness.
  • These kebabs can also be baked in the oven at 400°F (200°C) for 15-20 minutes, turning halfway through.
