Ingredients

  • 4 chops Lamb Chops (Rib chops preferred)
  • 1 tablespoon Olive Oil (To prevent butter from burning)
  • 4 tablespoons Unsalted Butter (Rich base for the glaze)
  • 4 cloves Garlic (Minced)
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1/2 teaspoon Fresh Rosemary (Chopped)
  • 1/4 teaspoon Red Pepper Flakes (Optional for heat)
  • 1 lemon Lemon Wedges (For squeezing over chops)

Instructions

  1. Allow the lamb chops to sit at room temperature for 20-30 minutes. Pat them dry and season generously with salt, black pepper, and optional red pepper flakes for a touch of heat.
  2. Place a cast iron skillet over medium-high heat. When it’s hot, add the olive oil, allowing it to shimmer before introducing the lamb chops into the pan.
  3. Lay the lamb chops in the skillet without overcrowding them. Sear for 3-4 minutes per side until a deep golden crust forms.
  4. Lower the heat to medium and add the unsalted butter, minced garlic, and fresh rosemary to the skillet. Spoon the melted garlic butter over the chops until the internal temperature reaches 130°F.
  5. Transfer the lamb chops from the skillet to a plate, tent them with foil, and let them rest for 5-7 minutes.
  6. Just before serving, squeeze fresh lemon juice over the chops and drizzle the garlic butter on top.
