Description

A creamy and flavorful Italian Zucchini Sauce that pairs perfectly with pasta for a healthy meal.


Ingredients

Scale
  • 12 oz dry pasta
  • 2 1/2 lb zucchini
  • 3/4 cup extra-virgin olive oil
  • 1 cup diced sweet onion
  • pinch crushed red pepper flakes
  • 1 1/2 tbsp minced fresh garlic
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • 2 tbsp chopped fresh basil
  • 2 tbsp chopped fresh oregano
  • 2 tbsp chopped fresh mint
  • 1 cup heavy cream
  • 3/4 cup finely grated Romano cheese
  • 2 tbsp chopped fresh basil (to finish)
  • 2 tbsp chopped fresh oregano (to finish)
  • 2 tbsp chopped fresh mint (to finish)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion and cook until translucent.
  3. Stir in garlic and red pepper flakes, cooking for another minute.
  4. Add zucchini and sauté until tender.
  5. Season with salt and pepper, then stir in basil, oregano, and mint.
  6. Pour in heavy cream and stir until combined. Add Romano cheese and mix until melted.
  7. Serve sauce over pasta, garnished with fresh herbs.
