Description

Easy and healthy 3 ingredient banana oatmeal muffins made with ripe bananas, rolled oats, and eggs.


Ingredients

  • 2 large ripe bananas, mashed
  • 2 cups rolled oats
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease or line a muffin tin with paper liners.
  2. In a large bowl, mash the ripe bananas until smooth. Add the eggs and vanilla extract, and mix well.
  3. Stir in the rolled oats, baking powder, cinnamon, and salt. Mix until fully combined.
  4. Fold in the mini chocolate chips if using. Divide the batter evenly among the muffin cups.
  5. Bake for 16-18 minutes or until the muffins are firm and a toothpick inserted in the center comes out clean.
  6. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
