Description

Ina Garten’s Easy Meatloaf is a comforting classic, featuring juicy ground beef, simple seasonings, and a tangy ketchup glaze. This versatile dish is perfect for weeknight dinners or special occasions, pairing well with various side dishes.

Ingredients

Scale
  • 2 lbs ground beef (80-85% lean)
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 eggs
  • 1 cup bread crumbs
  • 2 tbsp Worcestershire sauce
  • 1/3 cup milk
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • For the Glaze:
  • 3/4 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp mustard

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a rimmed baking sheet or a loaf pan with parchment paper or lightly grease it.
  3. In a large mixing bowl, combine the ground beef, minced garlic, chopped onion, eggs, bread crumbs, Worcestershire sauce, milk, Italian seasoning, salt, and pepper.
  4. Mix gently until well combined, but avoid overmixing.
  5. Transfer the meat mixture onto the prepared baking sheet or into the loaf pan, shaping it into a loaf.
  6. In a small bowl, mix together the ketchup, brown sugar, and mustard for the glaze.
  7. Spread half of the glaze over the top of the meatloaf.
  8. Bake for 40-45 minutes, or until the internal temperature reaches 160°F (71°C).
  9. During the last 10 minutes of baking, spread the remaining glaze over the meatloaf.
  10. Remove from oven and let rest for 10 minutes before slicing.

Notes

  • Avoid overmixing the meat mixture to prevent a dense meatloaf.
  • Let the meatloaf rest after baking to allow juices to redistribute for a moist texture.
  • For a leaner option, substitute half the ground beef with ground turkey or pork.
  • Add finely chopped vegetables like bell peppers, mushrooms, or zucchini for extra flavor and nutrition.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
