Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a 9×13 inch pan with parchment paper, leaving overhang for easy removal.
  3. Cream softened butter, brown sugar, and granulated sugar in a large bowl for 2–3 minutes until fluffy.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg (if using), and salt.
  6. Gradually mix the dry ingredients into the wet ingredients until just combined.
  7. Gently fold in the old-fashioned rolled oats until evenly mixed.
  8. Press the oatmeal cookie bar dough into the prepared pan in an even layer.
  9. Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted into the center comes out with moist crumbs.
  10. Cool the oatmeal cookie bars completely in the pan on a wire rack (up to 2 hours).
  11. Prepare the vanilla icing by whisking together sifted powdered sugar, milk or cream, vanilla extract, and optional salt. Adjust consistency as needed.
  12. Spread the icing evenly over the cooled oatmeal bars using a spatula.
  13. Let the icing set at room temperature for 30–60 minutes.
