Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1 cup corn kernels
  • 1/2 cup Greek yogurt
  • 1/4 cup lime juice
  • 1/4 cup chopped cilantro

  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. Cook chicken until 165°F, shred, and set aside.
  2. Sauté corn in a skillet over medium heat for 5 minutes until slightly charred.
  3. In a bowl, whisk Greek yogurt, lime juice, chili powder, salt, and pepper.
  4. Combine chicken, corn, cilantro, and feta (if using) with the dressing.
  5. Chill for 30 minutes before serving.
