Instructions
- In a small bowl, whisk the eggs vigorously until well combined and pale yellow.
- Heat a small cast iron skillet over medium-high heat. Add the unsalted butter and swirl it around to coat the pan evenly.
- Pour the whisked eggs into the skillet immediately. Start whisking continuously for 10-15 seconds to prevent sticking.
- Continue whisking until the eggs become fluffy and just cooked through, about 1-2 minutes total.
- Gently fold the cooked eggs onto a plate and sprinkle generously with fresh herbs, salt, and pepper.
