Description

  • 1 teaspoon pure vanilla extract
  • ¾ cup (180ml) whole milk, room temperature
  • 3 large (450-500g) Granny Smith or Honeycrisp apples, peeled, cored, diced ½-inch
  • 1 tablespoon fresh lemon juice
  • ¼ cup (50g) granulated sugar
  • 2 tablespoons light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 2 tablespoons water (optional, for apples)
  • ¾ cup (90g) all-purpose flour (for crumble)
  • ½ cup (50g) rolled oats
  • ½ cup (100g) light brown sugar, packed (for crumble)
  • ¼ cup (50g) granulated sugar (for crumble)
  • 1 teaspoon ground cinnamon (for crumble)
  • ½ teaspoon fine sea salt (for crumble)
  • 6 tablespoons (85g) unsalted butter, very cold, cubed (for crumble)
  • 1 ½ cups (180g) confectioners’ sugar (powdered sugar), sifted
  • 34 tablespoons apple juice or whole milk (for drizzle)
  • ½ teaspoon ground cinnamon (for drizzle)
  • ¼ teaspoon pure vanilla extract (for drizzle)

Instructions

  1. Prepare the Apple Filling: Peel, core, and dice apples into ½-inch pieces. Toss with lemon juice, ¼ cup granulated sugar, 2 tbsp light brown sugar, 1 tsp ground cinnamon, and ¼ tsp nutmeg. Sprinkle with cornstarch and optional water if apples are dry. Transfer to a saucepan and cook over medium heat for 5-7 minutes until slightly softened. Cool completely.
  2. Craft the Crumble Topping: Whisk together ¾ cup all-purpose flour, rolled oats, ½ cup light brown sugar, ¼ cup granulated sugar, 1 tsp ground cinnamon, and ½ tsp sea salt. Add cold, cubed unsalted butter. Work butter into dry ingredients until coarse crumbs form. Chill in the refrigerator.
  3. Prepare Cake Batter: Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan. Whisk together 2 ½ cups sifted all-purpose flour, baking powder, baking soda, and ½ tsp sea salt. Cream room temperature unsalted butter, ¾ cup granulated sugar, and ½ cup light brown sugar. Add eggs one at a time, mixing in 1 tsp vanilla extract. Alternately add dry ingredients and whole milk until just combined.
  4. Assemble and Bake the Cake: Pour two-thirds of cake batter into the prepared pan. Spread cooled apple filling over the batter. Dollop remaining cake batter over the apple filling. Sprinkle chilled crumble topping over the entire surface. Bake for 50-65 minutes until a skewer comes out clean. Cool completely on a wire rack.
  5. Create the Cinnamon Apple Drizzle: Sift confectioners’ sugar. Add ½ tsp ground cinnamon and ¼ tsp vanilla extract. Gradually whisk in 3-4 tablespoons apple juice one tablespoon at a time until smooth. Adjust consistency as needed.
  6. Serve and Store: Drizzle cinnamon apple drizzle over the cooled cake. Slice into squares and serve. Store leftovers in an airtight container at room temperature for 2-3 days or in the refrigerator for up to 5 days. Freeze individual slices for longer storage.
