Ingredients

- 1 can (15 oz) garbanzo beans, rinsed and drained
- 1 can (5 oz) tuna, preferably in water
- 1 small red onion, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 tsp dijon mustard
- 1/4 tsp kosher salt
Instructions
- Rinse and drain garbanzo beans. Open and drain tuna. Chop cucumber, tomatoes, onion, and parsley.
- In a large bowl, combine garbanzo beans and tuna, breaking up tuna.
- Fold in cucumber, tomatoes, and onion.
- In a small bowl, whisk olive oil, lemon juice, dijon mustard, and salt. Drizzle over salad and toss.
- Garnish with parsley. Serve immediately or chill for an hour.
