Description

A nutritious and flavorful salad combining tuna, garbanzo beans, and fresh vegetables, perfect for a light meal.


Ingredients

  • 1 can (15 oz) garbanzo beans, rinsed and drained
  • 1 can (5 oz) tuna, preferably in water
  • 1 small red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp dijon mustard
  • 1/4 tsp kosher salt

Instructions

  1. Rinse and drain garbanzo beans. Open and drain tuna. Chop cucumber, tomatoes, onion, and parsley.
  2. In a large bowl, combine garbanzo beans and tuna, breaking up tuna.
  3. Fold in cucumber, tomatoes, and onion.
  4. In a small bowl, whisk olive oil, lemon juice, dijon mustard, and salt. Drizzle over salad and toss.
  5. Garnish with parsley. Serve immediately or chill for an hour.
