Ingredients

  • 1 large apple, peeled and chopped
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract
  • 3 tablespoons plain yogurt
  • 2 large eggs
  • 1 tablespoon unsalted butter or coconut oil, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease and flour a 9×13-inch baking pan, or line with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the rolled oats, ground cinnamon, baking soda, and baking powder until well combined.
  3. In a separate medium-sized bowl, whisk together the honey, vanilla extract, plain yogurt, large eggs, and melted unsalted butter or coconut oil until the mixture is smooth and emulsified.
  4. Pour the wet ingredient mixture into the dry ingredients. Stir gently with a spatula until just combined, being careful not to overmix. Fold in the peeled and chopped apple pieces, distributing them evenly throughout the batter.
  5. Carefully scoop the thick batter into your prepared baking pan, spreading it evenly. Bake for approximately 35-45 minutes (for a 9×13 pan), or until the edges are lightly golden and a wooden skewer or toothpick inserted into the center comes out clean or with a few moist crumbs.
  6. Once baked, remove the cake from the oven and place the pan on a wire cooling rack. Allow the cake to cool in the pan for 15-20 minutes before carefully transferring it directly to the wire rack to cool completely. Allowing it to cool completely before slicing ensures the best texture. Serve warm or at room temperature.
