Description

Ingredients

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 stalks celery, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup frozen peas
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp tomato paste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon.
  2. Add chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.
  3. Stir in diced potatoes, diced tomatoes (with juices), beef broth, tomato paste, dried thyme, salt, and black pepper. Mix well.
  4. Bring the stew to a boil, then reduce heat to low. Cover and simmer for 40 minutes, stirring occasionally, until the vegetables are tender.
  5. Add frozen peas and simmer for an additional 5 minutes. Taste and adjust seasoning if necessary before serving.
