- 1 tablespoon olive oil
- 1 medium onion, chopped

- 1 teaspoon dried oregano
- 1 pound potatoes, thinly sliced
- 1 cup milk
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain excess grease.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic, salt, pepper, paprika, and oregano. Cook for 1 minute more until fragrant.
- In a separate bowl, toss the thinly sliced potatoes with milk.
- Spread half of the seasoned ground beef mixture in the bottom of a 9×13 inch baking dish.
- Layer half of the milk-coated potatoes over the ground beef.
- Sprinkle half of the shredded cheddar and Monterey Jack cheese over the potatoes.
- Repeat the layers with the remaining ground beef mixture, potatoes, and cheese.
- Cover the baking dish with aluminum foil.
- Bake for 45 minutes.
- Remove the foil and bake for another 10-15 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown.
- Let the ground beef potato casserole rest for 5 minutes before serving.

- For a creamier ground beef potato casserole, you can add a can of cream of mushroom soup or cream of chicken soup.
