Description

This ground beef potato casserole is an easy, family-friendly comfort food featuring layers of seasoned ground beef, creamy potatoes, and melted cheese. It’s a satisfying bake perfect for weeknights or gatherings.

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 pound potatoes, thinly sliced
  • 1 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain excess grease.
  3. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic, salt, pepper, paprika, and oregano. Cook for 1 minute more until fragrant.
  4. In a separate bowl, toss the thinly sliced potatoes with milk.
  5. Spread half of the seasoned ground beef mixture in the bottom of a 9×13 inch baking dish.
  6. Layer half of the milk-coated potatoes over the ground beef.
  7. Sprinkle half of the shredded cheddar and Monterey Jack cheese over the potatoes.
  8. Repeat the layers with the remaining ground beef mixture, potatoes, and cheese.
  9. Cover the baking dish with aluminum foil.
  10. Bake for 45 minutes.
  11. Remove the foil and bake for another 10-15 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown.
  12. Let the ground beef potato casserole rest for 5 minutes before serving.

Notes

  • For a creamier ground beef potato casserole, you can add a can of cream of mushroom soup or cream of chicken soup.
  • If you don’t have fresh potatoes, you can use frozen hash browns for a quicker version of this ground beef potato bake.
