Description

A simple and delicious one-pot ground beef orzo with tomato cream sauce, perfect for a quick weeknight dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (15 ounce) can diced tomatoes, undrained
  • 3 cups beef broth
  • 1 cup uncooked orzo pasta
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and Italian seasoning and cook for 1 minute more until fragrant.
  3. Season the ground beef mixture with salt and pepper.
  4. Pour in the undrained diced tomatoes and beef broth. Bring the mixture to a simmer.
  5. Stir in the uncooked orzo pasta. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until the orzo is tender and most of the liquid has been absorbed, stirring occasionally.
  6. Stir in the heavy cream and Parmesan cheese. Cook, stirring, until the sauce is creamy and heated through, about 2-3 minutes.
  7. Garnish with fresh parsley before serving this ground beef and tomato orzo dish.

Notes

  • For a spicier kick, add a pinch of red pepper flakes with the garlic.
  • You can substitute vegetable broth for beef broth if preferred.
