A simple and delicious one-pot ground beef orzo with tomato cream sauce, perfect for a quick weeknight dinner.

- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (15 ounce) can diced tomatoes, undrained
- 3 cups beef broth
- 1 cup uncooked orzo pasta
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain off any excess grease.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and Italian seasoning and cook for 1 minute more until fragrant.
- Season the ground beef mixture with salt and pepper.
- Pour in the undrained diced tomatoes and beef broth. Bring the mixture to a simmer.
- Stir in the uncooked orzo pasta. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until the orzo is tender and most of the liquid has been absorbed, stirring occasionally.
- Stir in the heavy cream and Parmesan cheese. Cook, stirring, until the sauce is creamy and heated through, about 2-3 minutes.
- Garnish with fresh parsley before serving this ground beef and tomato orzo dish.
Notes
- For a spicier kick, add a pinch of red pepper flakes with the garlic.
- You can substitute vegetable broth for beef broth if preferred.
