- 1 tablespoon Fresh Ginger (Grated)
- 2 cloves Garlic (Minced)
- 3 tablespoons Soy Sauce (Low-sodium preferred)
- 1 tablespoon Dark Soy Sauce (Optional)
- 1 cup Coconut Milk
- 2 tablespoons Brown Sugar (Can substitute with honey or maple syrup)
- 2 tablespoons Fresh Lime Juice (Fresh is preferable)
- to taste Salt
- to taste Pepper
- 1 pound Chicken (Dark meat recommended)
- 4 pieces Skewers (Soaked in water if wooden)
Instructions
- In a large mixing bowl, whisk together the fresh ginger, garlic, soy sauces, coconut milk, brown sugar, lime juice, salt, and pepper until well combined.
- Add the chicken chunks to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes or up to 4 hours.
- Remove the marinated chicken from the fridge and thread the pieces onto the soaked skewers.
- Preheat your grill over medium-high heat and lightly oil the grill grates.
- Place the skewers on the hot grill, cooking for approximately 4-5 minutes per side until the chicken is cooked to an internal temperature of 165°F.
- Squeeze fresh lime juice over the skewers before serving.
