Description

Grilled Thai Coconut Chicken Skewers are a delicious, easy-to-make dish featuring marinated chicken with coconut and Thai spices, perfect for summer feasts.


Ingredients

  • 1 tablespoon Fresh Ginger (Grated)
  • 2 cloves Garlic (Minced)
  • 3 tablespoons Soy Sauce (Low-sodium preferred)
  • 1 tablespoon Dark Soy Sauce (Optional)
  • 1 cup Coconut Milk
  • 2 tablespoons Brown Sugar (Can substitute with honey or maple syrup)
  • 2 tablespoons Fresh Lime Juice (Fresh is preferable)
  • to taste Salt
  • to taste Pepper
  • 1 pound Chicken (Dark meat recommended)
  • 4 pieces Skewers (Soaked in water if wooden)

Instructions

  1. In a large mixing bowl, whisk together the fresh ginger, garlic, soy sauces, coconut milk, brown sugar, lime juice, salt, and pepper until well combined.
  2. Add the chicken chunks to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  3. Remove the marinated chicken from the fridge and thread the pieces onto the soaked skewers.
  4. Preheat your grill over medium-high heat and lightly oil the grill grates.
  5. Place the skewers on the hot grill, cooking for approximately 4-5 minutes per side until the chicken is cooked to an internal temperature of 165°F.
  6. Squeeze fresh lime juice over the skewers before serving.
