- 1 pound salmon fillets
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill
- 1 teaspoon dried oregano
- 1 clove garlic
- ½ teaspoon salt
- ½ teaspoon ground black pepper
Instructions
- Preheat the oven to 400°F.
- Prepare the salmon. Pat dry the salmon fillets and place them skin-side down on a lined quarter sheet baking pan.
- Mix the marinade. In a small mixing bowl, combine olive oil, lemon juice, dill, oregano, garlic, salt, and pepper.
- Marinate the salmon. Brush or pour the marinade generously over the salmon fillets. Let them sit for about 5 minutes.
- Bake for 15 minutes. Place the baking pan in the oven and let the salmon cook until it flakes easily with a fork.
- Rest the salmon. Once out of the oven, allow the salmon to rest for 5 minutes.
- Serve with a squeeze of lemon. Plate the salmon and if desired, add an extra squeeze of lemon juice on top.
