- 0.5 cups olive oil
- 5 cloves garlic, minced
- 2 lemons juiced
- 1 lemon zested
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh oregano, chopped
- 2 teaspoons fresh rosemary, chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 6 large chicken breasts (approximately 4 pounds)
Instructions
- In a large shallow mixing bowl, combine the olive oil, minced garlic, lemon juice, lemon zest, chopped thyme, oregano, rosemary, parsley, salt, and black pepper. Mix well until fully blended!
- Add the chicken breasts to the marinade and toss until they are completely coated. Let them marinate for a minimum of 30 minutes, or up to 2 hours for enhanced flavor.
- Before grilling, clean the grill grates and lightly oil them with vegetable oil or cooking spray. Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and place it directly on the hot grill, discarding the remaining marinade. Cover and cook for about 5 minutes before reducing the heat to medium.
- After 2 minutes, flip each chicken breast using tongs. Grill for an additional 5-7 minutes, or until the internal temperature reaches 160°F.
- Once grilled, remove the chicken from the grill and transfer it to a clean plate. Tent with foil and let it rest for 5 minutes before slicing into tender, juicy pieces.
