  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • Salt and freshly ground black pepper to taste
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups beef broth
  • 1 cup orzo pasta
  • 1/2 cup crumbled feta cheese (optional, for serving)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain excess fat.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in minced garlic, oregano, thyme, cinnamon, and cloves. Cook for 1 minute until fragrant. Season with salt and pepper.
  4. Pour in the diced tomatoes (with their juice) and beef broth. Bring the mixture to a simmer.
  5. Stir in the orzo pasta. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the orzo is cooked through and most of the liquid has been absorbed, stirring occasionally.
