Ingredients

  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon fine sea salt
  • ½ cup unsalted butter (cold)
  • 1 large egg yolk
  • ½ cup milk (whole)
  • 4 cups sliced peaches (fresh)
  • ¾ cup granulated sugar
  • ¼ cup water
  • ¼ teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon pure vanilla extract
  • 2 cups neutral oil
  • ½ cup powdered sugar
  • ½ teaspoon ground cinnamon
  • a pinch kosher salt
  • milk for glaze if desired

Instructions

  1. In a medium saucepan, combine the peaches, sugar, water, salt, cinnamon, nutmeg, and lemon juice over medium heat. Bring to a gentle boil, stirring occasionally.
  2. Once boiling, use a potato masher or whisk to break down the peaches into smaller pieces, allowing the filling to become a bit creamy.
  3. Lower the heat to medium-low and cook until the liquid reduces, about 10 minutes.
  4. Stir in the vanilla extract and let the filling sit for 20 minutes to cool down and thicken further.
  5. In a medium bowl, sift together the flour, sugar, baking powder, and salt.
  6. Cut the cold butter into the flour mixture until you achieve pea-sized bits.
  7. Whisk together the egg yolk and milk, then add to the flour mixture and stir until a shaggy dough forms.
  8. Shape the dough into a round disk and roll it out to about a ¼-inch thick circle.
  9. Use a cutter to cut out four 4½-inch circles.
  10. Place a heaping tablespoon of the peach filling in the center of each circle. Wet the edges, fold them over, and seal securely.
  11. Use a floured fork to create a ridged edge along the sealed perimeter and pierce the tops to allow steam to escape.
  12. Refrigerate the prepared pies for 1 hour.
  13. In a Dutch oven, heat the oil to 350°F.
  14. Fry about 3 pies at a time for about 4 minutes, turning them halfway through until they are golden brown and crispy.
  15. Remove the pies and set them on a wire rack to cool for 5 minutes. Dust with powdered sugar and a sprinkle of cinnamon before serving.
