Description

Delicious Eggless Banana Bread That’s Moist and Irresistible

Ingredients

Scale
  • 2 cups All-Purpose Flour (Substitute with a gluten-free flour blend for a gluten-free version.)
  • 1 tbsp Baking Powder (Make sure it’s fresh for best results.)
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Cinnamon Powder (Optional)
  • 11.5 cups Ripe Bananas (Use overripe, dark-spotted bananas for maximum flavor.)
  • 3/4 cup Granulated Sugar (Replace with coconut sugar for a deeper flavor.)
  • 1/4 cup Light Brown Sugar
  • 1/2 cup Neutral Oil (Can be swapped with melted coconut oil.)
  • 1/2 cup Applesauce (Can be replaced with mashed avocado or yogurt.)
  • 1 tsp Vanilla Extract
  • 1/2 cup Milk (Dairy or plant-based options like almond, oat, or coconut milk.)
  • 1/2 cup Walnuts
  • 1/2 cup Chocolate Chips
  • 1/2 cup Shredded Coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing it and lining it with parchment paper.
  2. In a large bowl, mash the ripe bananas with a fork until smooth, leaving a few small lumps for added texture.
  3. Whisk together the mashed bananas with granulated sugar, light brown sugar, neutral oil, applesauce, vanilla extract, and milk until glossy and well-combined.
  4. In a separate bowl, sift together all-purpose flour, baking powder, baking soda, salt, and optional cinnamon powder.
  5. Gradually fold the dry ingredients into your wet mixture until just combined, ensuring not to overmix.
  6. Fold in your chosen nuts, chocolate chips, or shredded coconut if using.
  7. Pour the batter into the prepared loaf pan and bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
  8. Let your freshly baked bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
