Ingredients
Scale
- 2 cups All-Purpose Flour (Substitute with a gluten-free flour blend for a gluten-free version.)
- 1 tbsp Baking Powder (Make sure it’s fresh for best results.)
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1 tsp Cinnamon Powder (Optional)
- 1–1.5 cups Ripe Bananas (Use overripe, dark-spotted bananas for maximum flavor.)
- 3/4 cup Granulated Sugar (Replace with coconut sugar for a deeper flavor.)
- 1/4 cup Light Brown Sugar
- 1/2 cup Neutral Oil (Can be swapped with melted coconut oil.)
- 1/2 cup Applesauce (Can be replaced with mashed avocado or yogurt.)
- 1 tsp Vanilla Extract
- 1/2 cup Milk (Dairy or plant-based options like almond, oat, or coconut milk.)
- 1/2 cup Walnuts
- 1/2 cup Chocolate Chips
- 1/2 cup Shredded Coconut
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing it and lining it with parchment paper.
- In a large bowl, mash the ripe bananas with a fork until smooth, leaving a few small lumps for added texture.
- Whisk together the mashed bananas with granulated sugar, light brown sugar, neutral oil, applesauce, vanilla extract, and milk until glossy and well-combined.
- In a separate bowl, sift together all-purpose flour, baking powder, baking soda, salt, and optional cinnamon powder.
- Gradually fold the dry ingredients into your wet mixture until just combined, ensuring not to overmix.
- Fold in your chosen nuts, chocolate chips, or shredded coconut if using.
- Pour the batter into the prepared loaf pan and bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
- Let your freshly baked bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
