Instructions
- In a mixing bowl, whisk together cornstarch, flour, baking powder, and salt.
- Gradually add cold water until you have a smooth batter for your dynamite shrimp.
- Heat 2 inches of vegetable oil in a heavy skillet or deep fryer to 350°F (175°C).
- Pat shrimp dry with paper towels.
- Dip each shrimp into the batter, shaking off excess, to prepare for frying.
- Fry shrimp in batches for 2-3 minutes, or until golden brown and crispy, for perfect dynamite shrimp.
- Remove with a slotted spoon and drain on paper towels.
- In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth to create the dynamite shrimp sauce.
- Toss fried shrimp in the sauce until fully coated.
- Garnish with chopped green onions and sesame seeds before serving immediately.
