Description

Ingredients

  • 1 pound large shrimp, peeled and deveined, tails removed
  • 1/2 cup cornstarch
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold water
  • Vegetable oil for frying
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar
  • Chopped green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. In a mixing bowl, whisk together cornstarch, flour, baking powder, and salt.
  2. Gradually add cold water until you have a smooth batter for your dynamite shrimp.
  3. Heat 2 inches of vegetable oil in a heavy skillet or deep fryer to 350°F (175°C).
  4. Pat shrimp dry with paper towels.
  5. Dip each shrimp into the batter, shaking off excess, to prepare for frying.
  6. Fry shrimp in batches for 2-3 minutes, or until golden brown and crispy, for perfect dynamite shrimp.
  7. Remove with a slotted spoon and drain on paper towels.
  8. In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth to create the dynamite shrimp sauce.
  9. Toss fried shrimp in the sauce until fully coated.
  10. Garnish with chopped green onions and sesame seeds before serving immediately.
