Description

Dolly Parton’s Macaroni Salad is a creamy, tangy Southern favorite perfect for gatherings and potlucks.


Ingredients

  • 2 cups Elbow Macaroni (or shells for a twist)
  • 1 cup Mayonnaise (or Greek yogurt for a lighter option)
  • 2 tablespoons Dijon Mustard
  • 2 tablespoons Apple Cider Vinegar
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Chopped Celery
  • 1 cup Chopped Green Bell Pepper
  • 1 cup Finely Chopped Red Onion
  • 1 cup Sweet Pickle Relish (or substitute dill pickles)

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add the elbow macaroni and cook until al dente, about 8-10 minutes. Drain and rinse under cold water to cool.
  2. Finely chop the celery, green bell pepper, red onion, and pickles while the macaroni cools.
  3. In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper until smooth.
  4. Gently fold the cooled macaroni into the dressing mixture. Add chopped vegetables and relish, stirring until evenly coated.
  5. Cover and refrigerate for at least 1 hour, preferably overnight. Stir before serving.
