- 2 cups Elbow Macaroni (or shells for a twist)
- 1 cup Mayonnaise (or Greek yogurt for a lighter option)
- 2 tablespoons Dijon Mustard
- 2 tablespoons Apple Cider Vinegar
- 1 tablespoon Sugar
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Chopped Celery
- 1 cup Chopped Green Bell Pepper
- 1 cup Finely Chopped Red Onion
- 1 cup Sweet Pickle Relish (or substitute dill pickles)
Instructions
- Bring a large pot of salted water to a rolling boil. Add the elbow macaroni and cook until al dente, about 8-10 minutes. Drain and rinse under cold water to cool.
- Finely chop the celery, green bell pepper, red onion, and pickles while the macaroni cools.
- In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper until smooth.
- Gently fold the cooled macaroni into the dressing mixture. Add chopped vegetables and relish, stirring until evenly coated.
- Cover and refrigerate for at least 1 hour, preferably overnight. Stir before serving.
