Description

This Crockpot Spinach Artichoke Dip recipe offers a creamy, cheesy, and warm appetizer perfect for any gathering. It’s incredibly easy to make, requiring minimal prep and allowing your slow cooker to do the work.

Ingredients

Scale
  • 1 medium Onion, Diced
  • 2 cloves Garlic, Minced
  • 10 ounces Frozen Spinach, No need to thaw
  • 14 ounces Canned Artichoke Hearts, Well drained
  • 1 cup Sour Cream (Can substitute with Greek yogurt)
  • 1/2 cup Mayonnaise (Can substitute with Greek yogurt)
  • 1/2 cup Parmesan Cheese, Freshly grated
  • 1 cup Shredded Mozzarella Cheese (Can use cheddar for variety)
  • 8 ounces Cream Cheese, No need to beat
  • 1 bag Tortilla Chips for serving

Instructions

  • Gather ingredients and place them on countertop.
  • Combine diced onion, minced garlic, frozen spinach, drained artichoke hearts, sour cream, mayonnaise, Parmesan, and shredded mozzarella in the Crockpot.
  • Add cream cheese on top of the mixture without stirring.
  • Cover and cook on high for 90 minutes.
  • After 90 minutes, stir the mixture to combine the melted cream cheese.
  • Cover and cook for an additional 15-30 minutes until bubbly.
  • Serve warm with tortilla chips or favorite dippers.
  • Optional: Sprinkle extra Parmesan on top before serving.

Notes

  • For a vegan version, substitute dairy ingredients with plant-based alternatives.
  • To avoid a watery dip, do not overcook; switch to ‘warm’ setting as soon as it starts bubbling.
  • Adjust thickness by adding more cream cheese or shredded cheese if needed.
  • Assemble up to 48 hours in advance and refrigerate; cook directly from the fridge, increasing cooking time.
  • Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
