Description

Creamy slow cooker Cajun chicken pasta made with tender chicken, bold Cajun seasoning, bell peppers, and a rich, velvety sauce tossed with pasta.


Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 12 oz penne pasta
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Season the chicken breasts on both sides with Cajun seasoning, salt, and black pepper.
  2. Place the chicken in the crock pot along with garlic and diced bell pepper.
  3. Pour in the chicken broth, cover, and cook on low for 4 to 5 hours until the chicken is tender.
  4. Remove the chicken and shred or slice it, then return it to the crock pot.
  5. Add heavy cream and cream cheese to the slow cooker and stir until the sauce becomes smooth and creamy.
  6. Cook the pasta separately according to package instructions until al dente, then drain.
  7. Add the cooked pasta and Parmesan cheese to the crock pot and stir until well coated.
  8. Taste and adjust seasoning if needed.
  9. Garnish with fresh parsley and serve warm.
