- 1 1/2 lbs boneless skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup chicken broth
- 1 cup heavy cream
- 4 oz cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 12 oz penne pasta
- Salt and black pepper, to taste
- Fresh parsley, for garnish
Instructions
- Season the chicken breasts on both sides with Cajun seasoning, salt, and black pepper.
- Place the chicken in the crock pot along with garlic and diced bell pepper.
- Pour in the chicken broth, cover, and cook on low for 4 to 5 hours until the chicken is tender.
- Remove the chicken and shred or slice it, then return it to the crock pot.
- Add heavy cream and cream cheese to the slow cooker and stir until the sauce becomes smooth and creamy.
- Cook the pasta separately according to package instructions until al dente, then drain.
- Add the cooked pasta and Parmesan cheese to the crock pot and stir until well coated.
- Taste and adjust seasoning if needed.
- Garnish with fresh parsley and serve warm.
