Description

Savory and sweet Crock Pot Bourbon Chicken made with tender chicken thighs simmered in a rich bourbon sauce.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1/2 cup bourbon
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar, packed
  • 1/4 cup ketchup
  • 1 tablespoon apple cider vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon crushed red pepper flakes
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 green onions, sliced (for garnish)

Instructions

  1. Place the chicken thighs in the bottom of the crock pot.
  2. In a medium bowl, whisk together bourbon, soy sauce, brown sugar, ketchup, apple cider vinegar, garlic, ground ginger, and red pepper flakes until combined.
  3. Pour the sauce mixture over the chicken thighs in the crock pot.
  4. Cover and cook on low for 6 hours or until chicken is tender and cooked through.
  5. Remove chicken and shred or cut into bite-size pieces. In a small bowl, mix cornstarch with water to create a slurry. Stir slurry into the sauce in the crock pot. Return chicken to the pot and cook for an additional 10 minutes on high until sauce thickens.
  6. Serve hot, garnished with sliced green onions.
