  • 1 teaspoon smoked paprika (Regular paprika can be substituted for a milder flavor.)

Instructions

  1. Begin by cooking your carrots in a pot of boiling water for about 10-12 minutes, until fork-tender but not too soft.
  2. Allow the carrots to cool for a couple of minutes and then gently smash them with a fork or the bottom of a glass.
  3. Drizzle the smashed carrots with olive oil, sprinkle with garlic powder, smoked paprika, Parmesan cheese, salt, and pepper; toss gently.
  4. Lay the seasoned carrots flat on a parchment-lined baking tray and roast in a preheated oven at 425°F for 20-25 minutes.
