Description

Crispy grated potato fritters are a quick and comforting dish, perfect for any meal or gathering.


Ingredients

  • 1 lb Potatoes (Peeled and grated)
  • 0.25 cup White Onion (Easily swap for green onions or shallots)
  • 0.5 cup Flour (Choose regular or spelt flour)
  • 1 tsp Garlic Powder (Fresh minced garlic can be used for extra zing)
  • 1 tsp Dried Thyme (Try swapping with dried parsley or rosemary)
  • 1 tsp Baking Powder (Check for freshness)
  • 1 Egg Yolk (A flax egg is a great vegan alternative)
  • to taste Salt (Essential seasoning)
  • to taste Black Pepper (Essential seasoning)
  • for frying tbsp Olive Oil (Ensure skillet is hot enough)

Instructions

  1. Start by peeling and grating 1 lb of potatoes, along with ¼ of a white onion, using the large side of a grater.
  2. Place the grated mixture into a clean tea towel. Gather the corners and squeeze firmly to remove as much liquid as possible.
  3. In a large mixing bowl, combine the drained potato and onion with flour, garlic powder, dried thyme, baking powder, egg yolk, salt, and pepper. Stir until everything is well mixed.
  4. Drizzle olive oil into a skillet and heat it to medium. Drop a small amount of batter into the skillet—it should sizzle when it hits the pan!
  5. Using about 3-4 tablespoons of the batter, carefully form fritters and fry them for 3-4 minutes on each side until golden brown.
