- 1 lb Potatoes (Peeled and grated)
- 0.25 cup White Onion (Easily swap for green onions or shallots)
- 0.5 cup Flour (Choose regular or spelt flour)
- 1 tsp Garlic Powder (Fresh minced garlic can be used for extra zing)
- 1 tsp Dried Thyme (Try swapping with dried parsley or rosemary)
- 1 tsp Baking Powder (Check for freshness)
- 1 Egg Yolk (A flax egg is a great vegan alternative)
- to taste Salt (Essential seasoning)
- to taste Black Pepper (Essential seasoning)
- for frying tbsp Olive Oil (Ensure skillet is hot enough)
Instructions
- Start by peeling and grating 1 lb of potatoes, along with ¼ of a white onion, using the large side of a grater.
- Place the grated mixture into a clean tea towel. Gather the corners and squeeze firmly to remove as much liquid as possible.
- In a large mixing bowl, combine the drained potato and onion with flour, garlic powder, dried thyme, baking powder, egg yolk, salt, and pepper. Stir until everything is well mixed.
- Drizzle olive oil into a skillet and heat it to medium. Drop a small amount of batter into the skillet—it should sizzle when it hits the pan!
- Using about 3-4 tablespoons of the batter, carefully form fritters and fry them for 3-4 minutes on each side until golden brown.
