Crispy Duchess Potatoes are an elegant and delicious side dish that elevate any meal with their buttery, creamy texture.

- 2 pounds Russet or Yukon Gold Potatoes
- 3 large Egg Yolks
- 1/4 cup Unsalted Butter
- 1/4 cup Heavy Cream
- 1/4 cup Grated Parmesan Cheese
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 tablespoon Chopped Chives or Parsley
- 1 tablespoon Sea Salt
Instructions
- Peel, chop, and place the potatoes in a pot filled with salted water. Boil for 15-20 minutes until fork-tender. Drain and return to pot.
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a small saucepan or microwave, melt 2 tablespoons of unsalted butter and warm the heavy cream. Set aside to cool slightly before adding to the potatoes.
- Using a potato masher or ricer, mash the drained potatoes until smooth. Stir in the warmed cream, melted butter, Parmesan cheese, salt, and pepper. Mix in the egg yolks until fully incorporated.
- Transfer the creamy potato mixture to a piping bag fitted with a star tip. Pipe small mounds onto the prepared baking sheet.
- Brush the tops of the piped potatoes generously with remaining melted butter. Bake for 15-20 minutes until golden brown and crispy.
- Remove from the oven and sprinkle with chopped chives or parsley and sea salt. Serve immediately.
