Description

Crispy Duchess Potatoes are an elegant and delicious side dish that elevate any meal with their buttery, creamy texture.


Ingredients

  • 2 pounds Russet or Yukon Gold Potatoes
  • 3 large Egg Yolks
  • 1/4 cup Unsalted Butter
  • 1/4 cup Heavy Cream
  • 1/4 cup Grated Parmesan Cheese
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 tablespoon Chopped Chives or Parsley
  • 1 tablespoon Sea Salt

Instructions

  1. Peel, chop, and place the potatoes in a pot filled with salted water. Boil for 15-20 minutes until fork-tender. Drain and return to pot.
  2. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  3. In a small saucepan or microwave, melt 2 tablespoons of unsalted butter and warm the heavy cream. Set aside to cool slightly before adding to the potatoes.
  4. Using a potato masher or ricer, mash the drained potatoes until smooth. Stir in the warmed cream, melted butter, Parmesan cheese, salt, and pepper. Mix in the egg yolks until fully incorporated.
  5. Transfer the creamy potato mixture to a piping bag fitted with a star tip. Pipe small mounds onto the prepared baking sheet.
  6. Brush the tops of the piped potatoes generously with remaining melted butter. Bake for 15-20 minutes until golden brown and crispy.
  7. Remove from the oven and sprinkle with chopped chives or parsley and sea salt. Serve immediately.
