Description

Crispy Dill Chicken Sandwich that combines crunchy panko chicken and creamy dill mayo in every bite.


Ingredients

  • 2 pounds Chicken Breasts (Boneless and skinless recommended)
  • 1 cup All-Purpose Flour (or whole wheat flour for healthier option)
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper (Adjust to taste)
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Dill (Fresh dill recommended for mayo)
  • 2 large Eggs (Whisked with milk)
  • 1/2 cup Milk
  • 2 cups Panko Breadcrumbs (Substitute with regular breadcrumbs if needed)
  • 1/2 cup Vegetable Oil (For frying)
  • 4 Brioche Buns (Lightly toasted)
  • 1/2 cup Mayonnaise (Can substitute with Greek yogurt)
  • 1 tablespoon Fresh Dill (Optional but recommended)
  • 1 tablespoon Lemon Juice
  • 2 cups Shredded Lettuce (Can substitute with other greens)
  • 1 cup Dill Pickles (Sliced)

Instructions

  1. Cut the chicken breasts in half horizontally and pound them to a uniform thickness of about 1/2 inch.
  2. In a shallow dish, combine all-purpose flour, salt, black pepper, garlic powder, onion powder, and dried dill.
  3. In a bowl, whisk together the eggs and milk until smooth.
  4. Place the panko breadcrumbs in a separate dish.
  5. Dredge each chicken piece in the flour mix first, dip it in the egg wash, and then coat it with panko breadcrumbs.
  6. Heat vegetable oil in a skillet over medium heat. Fry the chicken pieces for about 4-5 minutes on each side until golden brown.
  7. In a bowl, mix together mayonnaise, fresh dill, and lemon juice until well combined.
  8. Lightly toast the brioche buns until they are golden and slightly crispy.
  9. Spread a layer of dill mayo on each bun, then layer with shredded lettuce, the fried chicken, and dill pickles.
