- 1/2 medium head Green Cabbage (finely shredded)
- 1 medium Carrot (shredded)
- 3 Scallions (thinly sliced)
- 3 Eggs (lightly beaten)
- 1 cup All-purpose Flour (or substitute with chickpea or gluten-free flour)
- 2 cloves Garlic (minced)
- Salt and Black Pepper (to taste)
- 1/2 teaspoon Paprika
- 3–4 tablespoons Avocado Oil or Olive Oil (for frying)
- 1 cup Sour Cream or Plain Greek Yogurt (or substitute with mayonnaise)
- 1 tablespoon Sriracha or Hot Sauce (to taste)
- 1 tablespoon Lemon Juice
- 1/4 teaspoon Garlic Powder
Instructions
- In a large mixing bowl, combine the shredded cabbage, carrot, scallions, eggs, flour, minced garlic, salt, black pepper, and paprika. Stir until everything is well mixed and only a little lumpy.
- Heat 3-4 tablespoons of oil in a skillet over medium heat until shimmering. Scoop about 1/4 cup of batter and flatten it into a 3-inch fritter. Fry for 3-4 minutes on each side or until golden brown and crispy.
- Transfer the cooked fritters onto a paper towel-lined plate to absorb excess oil. Continue to cook the remaining batter, adding oil to the skillet as needed, ensuring each fritter has room to crisp up nicely.
- In a small bowl, mix together sour cream or Greek yogurt, Sriracha or hot sauce, lemon juice, and garlic powder. Stir until smooth and well combined.
- Enjoy your warm crispy fritters alongside the dipping sauce. If desired, garnish with additional sliced scallions for a fresh touch.
