Description

A velvety and heartwarming vegan Creamy Roasted Garlic Tomato Soup, perfect for chilly days. This easy recipe features the rich flavors of roasted garlic and ripe tomatoes, ready in under an hour.


Ingredients

  • 6 cups Ripe Organic Tomatoes (a mix of large and cherry tomatoes)
  • 2 bulbs Garlic
  • 0.5 cups Onion chopped
  • 1 tbsp Extra Virgin Olive Oil
  • 1.5 cups Organic Heavy Cream (or full-fat coconut cream for vegan)
  • 2 cups Organic Vegetable Stock
  • 4 tbsp Organic Tomato Paste
  • 1 tsp Sea Salt
  • 1 tsp On Everything All-Purpose Blend
  • 0.5 tsp Smoked Paprika
  • Optional: Fresh basil for garnish
  • Optional: Grilled Cheese Sandwich for pairing

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place ripe organic tomatoes and whole garlic bulbs on a baking sheet. Drizzle with olive oil and roast for 25-30 minutes until blistered and tender.
  3. In a Dutch oven, heat 1 tablespoon of extra virgin olive oil over medium-high heat. Add chopped onion and sauté for 1-2 minutes until translucent.
  4. Carefully add roasted tomatoes, squeezed garlic cloves, sautéed onions, tomato paste, and vegetable stock to a blender. Blend until smooth and creamy.
  5. Pour the mixture back into the pot. Stir in heavy cream, sea salt, all-purpose blend, and smoked paprika.
  6. Heat over medium, bringing to a gentle boil for 1-2 minutes. Reduce heat and simmer for 5-6 minutes until thickened.
  7. Serve hot, garnished with reserved roasted tomatoes or fresh basil if desired. Enjoy with a grilled cheese sandwich.

  • For a vegan version, use full-fat coconut cream instead of heavy cream.
