- 4 pieces Chicken Breasts
- 8 ounces Mushrooms
- 4 cloves Garlic
- 1 pint Cherry Tomatoes
- 5 ounces Fresh Spinach
- 1 cup Heavy Cream
- 2 tablespoons Capers
- 1/2 cup Parmesan Cheese
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with salt, pepper, and dried oregano.
- Add seasoned chicken to the skillet and sear for 5-7 minutes on each side until golden brown.
- Remove chicken and set aside.
- In the same skillet, sauté sliced mushrooms for about 4-5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Add cherry tomatoes, capers, and fresh spinach to the skillet, cooking for 2-3 minutes until spinach wilts.
- Pour in heavy cream and chicken broth, then add Parmesan cheese and simmer for 3-5 minutes.
- Return cooked chicken to the skillet and warm through for about 2 minutes.
- Garnish with fresh parsley and crushed red pepper flakes before serving.
