Ingredients

  • 2 tablespoons Olive Oil
  • 4 pieces Chicken Breasts
  • 8 ounces Mushrooms
  • 4 cloves Garlic
  • 1 pint Cherry Tomatoes
  • 5 ounces Fresh Spinach
  • 1 cup Heavy Cream
  • 2 tablespoons Capers
  • 1/2 cup Parmesan Cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken with salt, pepper, and dried oregano.
  3. Add seasoned chicken to the skillet and sear for 5-7 minutes on each side until golden brown.
  4. Remove chicken and set aside.
  5. In the same skillet, sauté sliced mushrooms for about 4-5 minutes.
  6. Add minced garlic and cook for 1 minute until fragrant.
  7. Add cherry tomatoes, capers, and fresh spinach to the skillet, cooking for 2-3 minutes until spinach wilts.
  8. Pour in heavy cream and chicken broth, then add Parmesan cheese and simmer for 3-5 minutes.
  9. Return cooked chicken to the skillet and warm through for about 2 minutes.
  10. Garnish with fresh parsley and crushed red pepper flakes before serving.

Notes

  • Can substitute chicken breasts with thighs or turkey.
  • Use half-and-half or coconut cream instead of heavy cream for a lighter option.
  • Omit Parmesan cheese for a lighter version.
