Ingredients

  • 2 tablespoons olive oil, divided
  • 1 ½ pounds lean ground beef
  • 1 large yellow onion, finely diced (about 1 ½ cups)
  • 4 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes, undrained
  • 1 (14.5 ounce) can petite diced tomatoes, undrained
  • 2 cups beef broth, low sodium
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper, freshly ground, or to taste
  • 8 ounces cream cheese, softened and cut into 1-inch cubes
  • ½ cup heavy cream
  • 1 pound medium shell pasta (Conchiglie Medium)
  • Salt for pasta water
  • 2 cups shredded cheese blend
  • ¼ cup fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil and sauté onions until translucent (5-7 mins). Add garlic; cook 1 min until fragrant.
  2. Push aromatics aside, brown ground beef (8-10 mins), breaking it up; drain excess fat.
  3. Deglaze pan with crushed and petite diced tomatoes. Add beef broth, Worcestershire sauce, Italian seasoning, smoked paprika, salt, and pepper. Stir well, bring to a gentle simmer, cover and cook for 20-25 mins.
  4. Stir in softened cream cheese cubes until smooth. Add heavy cream and stir until combined. Adjust seasonings as needed.
  5. Cook pasta al dente in salted boiling water. Drain pasta (do not rinse) and transfer hot pasta into the sauce. Fold until shells are coated.
  6. Preheat oven to 375°F (190°C). Grease a baking dish. Spoon mixture into dish, spreading evenly. Sprinkle cheese blend over the top.
  7. Bake for 20-25 mins until cheese is melted and bubbly. Let rest for 5-10 mins. Garnish with parsley if desired. Serve hot.
