  • 1 cup cottage cheese
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped green onions
  • 1/2 cup grated Parmesan
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup ranch dressing
  • 1 cup marinara sauce
  • 1 cup chipotle mayo

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Steam the cauliflower until tender, about 8-10 minutes. Mash it thoroughly.
  3. Combine the mashed cauliflower, cottage cheese, egg, green onions, and seasonings in a mixing bowl.
  4. Add breadcrumbs gradually until the mixture holds its shape but is still slightly sticky.
  5. Form small tots, about the size of a golf ball, and arrange them on a parchment-lined baking sheet.
  6. Bake for 20-25 minutes, turning them halfway through, until crispy and golden brown.
