- 1 cup Cheddar Cheese (shredded; substitute with Monterey Jack or Pepper Jack for a flavorful twist)
Instructions
- Preheat your oven to 350°F (175°C) to ensure proper baking.
- In a large bowl, mix together the creamed corn, drained whole kernel corn, Jiffy corn muffin mix, sour cream, and melted butter until just combined.
- Pour the mixture into a greased 9 x 13 casserole dish or a 10-inch cast iron skillet and spread it evenly.
- Bake uncovered for about 45 minutes or until the edges turn golden.
- Remove from the oven, sprinkle shredded cheddar cheese on top, and bake for an additional 10-15 minutes until the cheese is melted.
- Let the casserole stand for 5 minutes before serving to improve texture.
- For the Crock Pot, transfer the mixture to a greased Crock Pot and cook on high for 2-3 hours or low for 4 hours, adding cheese during the last 20 minutes.
