  • 1 cup Sour Cream (Greek yogurt is a great lighter option)
  • 1 stick Butter (melted; margarine or plant-based alternatives can be used)
  • 1 cup Cheddar Cheese (shredded; substitute with Monterey Jack or Pepper Jack for a flavorful twist)

Instructions

  1. Preheat your oven to 350°F (175°C) to ensure proper baking.
  2. In a large bowl, mix together the creamed corn, drained whole kernel corn, Jiffy corn muffin mix, sour cream, and melted butter until just combined.
  3. Pour the mixture into a greased 9 x 13 casserole dish or a 10-inch cast iron skillet and spread it evenly.
  4. Bake uncovered for about 45 minutes or until the edges turn golden.
  5. Remove from the oven, sprinkle shredded cheddar cheese on top, and bake for an additional 10-15 minutes until the cheese is melted.
  6. Let the casserole stand for 5 minutes before serving to improve texture.
