Ingredients

  • 1 cup Granulated Sugar
  • 1 tbsp Baking Powder
  • 0.5 tsp Salt
  • 0.5 cup Unsalted Butter
  • 1 cup Milk
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 0.5 cup Brown Sugar
  • 1 tbsp Ground Cinnamon
  • 1 cup Powdered Sugar
  • 2 tbsp Milk (for Icing)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 12-cup muffin tin with liners.
  2. Whisk together all-purpose flour, granulated sugar, baking powder, and salt in a mixing bowl.
  3. Combine melted unsalted butter, milk, large egg, and vanilla extract in another bowl, whisking until smooth.
  4. Mix the wet ingredients into the dry mixture gently until there are no flour streaks remaining.
  5. Prepare the cinnamon sugar filling by whisking brown sugar, ground cinnamon, and melted butter in a small bowl.
  6. Fill the muffin cups halfway with batter, then add a teaspoon of the cinnamon mixture on top.
  7. Swirl the filling slightly using a toothpick or knife, then top them with the remaining batter.
  8. Bake for 15-20 minutes, until a toothpick inserted comes out clean or with a few crumbs.
  9. Prepare the icing by whisking powdered sugar, milk, and optional vanilla until smooth and creamy.
  10. Cool the muffins in the pan for about 5 minutes before transferring them to a wire rack.
