Description

This Cinnamon Roll Banana Bread is a delicious vegan and gluten-free treat that combines the comforting flavors of cinnamon and ripe bananas. It’s perfect for breakfast, a snack, or even dessert, offering a moist texture and an irresistible aroma.

  • For the Bread:
  • 3 medium Mashed Bananas (overripe recommended)
  • 1/2 cup Vegan Butter (melted)
  • 1/4 cup Maple Syrup
  • 1/2 cup Almond Milk
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cups All-Purpose Flour (or gluten-free blend)
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 tablespoon Ground Cinnamon
  • 1/2 teaspoon Salt
  • 1/4 cup Brown Sugar (or coconut sugar)
  • For the Cinnamon Swirl:
  • 1/4 cup Vegan Butter (melted)
  • 1/4 cup Brown Sugar
  • 1 tablespoon Ground Cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, combine the mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract. Stir until smooth.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, gently folding until just combined. Do not overmix.
  5. In a small bowl, blend the melted vegan butter, brown sugar, and cinnamon for the swirl until smooth.
  6. Pour half of the banana bread batter into the prepared loaf pan. Dollop half of the cinnamon swirl mixture over the batter and swirl gently with a knife.
  7. Pour the remaining batter on top, then add the rest of the cinnamon swirl mixture and swirl again.
  8. Bake for approximately 45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Optional: Drizzle with a simple powdered sugar icing or serve warm with vegan butter or maple syrup.
