- 3 medium Mashed Bananas (overripe recommended)

- For the Cinnamon Swirl:
- 1/4 cup Vegan Butter (melted)
- 1/4 cup Brown Sugar
- 1 tablespoon Ground Cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, combine the mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract. Stir until smooth.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, gently folding until just combined. Do not overmix.
- In a small bowl, blend the melted vegan butter, brown sugar, and cinnamon for the swirl until smooth.
- Pour half of the banana bread batter into the prepared loaf pan. Dollop half of the cinnamon swirl mixture over the batter and swirl gently with a knife.
- Pour the remaining batter on top, then add the rest of the cinnamon swirl mixture and swirl again.
- Bake for approximately 45 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Optional: Drizzle with a simple powdered sugar icing or serve warm with vegan butter or maple syrup.
