Ingredients

  • 1 kg Skinless Chicken Thigh Fillet
  • 1/2 cup Dark Brown Sugar
  • 1 teaspoon Finely Ground White Pepper
  • 1/4 cup Rice Flour
  • 1 teaspoon Salt
  • 3 cloves Garlic, minced
  • 1/4 cup Soy Sauce
  • 2 tablespoons Vinegar
  • 1/2 cup Unsweetened Pineapple Juice
  • 1 teaspoon Red Food Color (optional)
  • 1 cup Water
  • 2 tablespoons Oil

Instructions

  1. In a large bowl, combine dark brown sugar, finely ground white pepper, rice flour, salt, minced garlic, soy sauce, vinegar, and unsweetened pineapple juice. Stir well until the sugar dissolves completely.
  2. Add the skinless chicken thigh fillets to the marinade, and massage the mixture into the meat for an even coating. Cover and refrigerate for at least 1 hour, or up to 3 days for deeper flavor.
  3. In a skillet, place the marinated chicken with 1 cup of water. Simmer uncovered for about 15-20 minutes, or until the liquid reduces and the chicken becomes tender.
  4. Add oil to the skillet, cooking until the sauce thickens and the chicken achieves a slightly charred, golden-brown exterior. Serve it hot for a delicious finish!

  • For best flavor, marinate the chicken overnight.
  • Adjust the sweetness by varying the amount of dark brown sugar.
