- 1 kg Skinless Chicken Thigh Fillet
- 1/2 cup Dark Brown Sugar
- 1 teaspoon Finely Ground White Pepper
- 1/4 cup Rice Flour
- 1 teaspoon Salt
- 3 cloves Garlic, minced
- 1/4 cup Soy Sauce
- 2 tablespoons Vinegar
- 1/2 cup Unsweetened Pineapple Juice
- 1 teaspoon Red Food Color (optional)
- 1 cup Water
- 2 tablespoons Oil
Instructions
- In a large bowl, combine dark brown sugar, finely ground white pepper, rice flour, salt, minced garlic, soy sauce, vinegar, and unsweetened pineapple juice. Stir well until the sugar dissolves completely.
- Add the skinless chicken thigh fillets to the marinade, and massage the mixture into the meat for an even coating. Cover and refrigerate for at least 1 hour, or up to 3 days for deeper flavor.
- In a skillet, place the marinated chicken with 1 cup of water. Simmer uncovered for about 15-20 minutes, or until the liquid reduces and the chicken becomes tender.
- Add oil to the skillet, cooking until the sauce thickens and the chicken achieves a slightly charred, golden-brown exterior. Serve it hot for a delicious finish!
