Description

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 pound Italian chicken sausage, sliced
  • 2 medium zucchini, sliced
  • 1 pint cherry tomatoes
  • 1 pound farfalle pasta
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the zucchini and cherry tomatoes with olive oil, minced garlic, oregano, basil, salt, and pepper.
  3. Spread the zucchini and tomatoes in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until the vegetables are tender and slightly caramelized.
  5. Meanwhile, cook the farfalle pasta according to package directions. Drain and set aside.
  6. In a separate skillet, brown the sliced chicken sausage over medium heat.
  7. Add the cooked chicken sausage to the roasted vegetables on the baking sheet.
  8. Toss the roasted chicken sausage and vegetables with the cooked farfalle pasta.
  9. Season with additional salt and pepper if needed.
  10. Serve immediately.
