- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 pound Italian chicken sausage, sliced
- 2 medium zucchini, sliced
- 1 pint cherry tomatoes
- 1 pound farfalle pasta
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the zucchini and cherry tomatoes with olive oil, minced garlic, oregano, basil, salt, and pepper.
- Spread the zucchini and tomatoes in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until the vegetables are tender and slightly caramelized.
- Meanwhile, cook the farfalle pasta according to package directions. Drain and set aside.
- In a separate skillet, brown the sliced chicken sausage over medium heat.
- Add the cooked chicken sausage to the roasted vegetables on the baking sheet.
- Toss the roasted chicken sausage and vegetables with the cooked farfalle pasta.
- Season with additional salt and pepper if needed.
- Serve immediately.
