Description

A comforting one-pot dish featuring tender chicken and orzo pasta, perfect for a quick weeknight meal.


Ingredients

Scale
  • 1.5 lb skinless, boneless chicken breasts
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 cup orzo (uncooked)
  • 5 cloves garlic, minced
  • 1 tablespoon olive oil
  • 10 oz cherry tomatoes, sliced in half
  • 2 cups chicken stock
  • ¼ teaspoon salt
  • 5 oz fresh spinach
  • ½ cup heavy cream
  • ¼ cup basil pesto

Instructions

  1. Season chicken with paprika, Italian seasoning, salt, and pepper.
  2. In a pot, heat 2 tbsp olive oil and sauté chicken until cooked through. Remove and set aside.
  3. In the same pot, add 1 tbsp olive oil and sauté minced garlic until fragrant.
  4. Add orzo, chicken stock, and salt; bring to a boil.
  5. Stir in chicken, cherry tomatoes, and spinach; cook until orzo is tender.
  6. Stir in heavy cream and basil pesto; mix well.
