- 1.5 lb skinless, boneless chicken breasts
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 1 cup orzo (uncooked)
- 5 cloves garlic, minced
- 1 tablespoon olive oil
- 10 oz cherry tomatoes, sliced in half
- 2 cups chicken stock
- ¼ teaspoon salt
- 5 oz fresh spinach
- ½ cup heavy cream
- ¼ cup basil pesto
Instructions
- Season chicken with paprika, Italian seasoning, salt, and pepper.
- In a pot, heat 2 tbsp olive oil and sauté chicken until cooked through. Remove and set aside.
- In the same pot, add 1 tbsp olive oil and sauté minced garlic until fragrant.
- Add orzo, chicken stock, and salt; bring to a boil.
- Stir in chicken, cherry tomatoes, and spinach; cook until orzo is tender.
- Stir in heavy cream and basil pesto; mix well.
