- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup all-purpose flour
- 3 tablespoons olive oil, divided
- 2 tablespoons unsalted butter
- 8 oz cremini or white mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup Madeira wine
- 1 cup low-sodium chicken broth
- 1/3 cup heavy cream
- 1 teaspoon Dijon mustard
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Prepare the chicken by pounding it to an even 1/2″ thickness. Season with salt and pepper, then lightly dredge in flour, shaking off excess.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and cooked through. Transfer chicken to a plate and cover loosely with foil.
- Add the remaining 1 tablespoon olive oil and 2 tablespoons butter to the same skillet. Add mushrooms and sauté for 4 minutes until browned. Stir in garlic and cook for 1 minute until fragrant.
- Pour in Madeira wine and scrape up any browned bits. Simmer for 3-4 minutes to reduce by half.
- Add chicken broth, heavy cream, and Dijon mustard. Simmer for another 5-6 minutes until slightly thickened. Stir in shredded mozzarella cheese until melted and the sauce is creamy. This is your secret sauce.
- Return the chicken to the skillet. Spoon the mushrooms and secret sauce over the chicken. Simmer for 2-3 minutes to heat through.
- Sprinkle with chopped fresh parsley and serve hot.
