A comforting casserole featuring chicken, butternut squash, and leeks, baked to perfection.
Ingredients

- 1 tbsp olive oil
- 1 lb chicken breast, diced
- 2 cups butternut squash, peeled and cubed
- 2 large leeks, cleaned and sliced
- 2 cloves garlic, minced
- 1 tsp thyme (fresh or dried)
- Salt and pepper, to taste
- 1/2 cup chicken broth
- 1/2 cup heavy cream or crème fraîche
- 1/2 cup grated Parmesan cheese
- 1/4 tsp ground nutmeg
- 1/2 cup breadcrumbs (optional)
- Cooking spray or butter for greasing
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté leeks until soft. Add garlic, thyme, salt, and pepper.
- Add diced chicken; cook until no longer pink.
- Stir in butternut squash, chicken broth, and cream; simmer until squash is tender.
- Transfer mixture to a baking dish, top with cheese and breadcrumbs.
- Bake for 25-30 minutes until golden brown.
