Delicious Chicken Enchiladas wrapped in soft tortillas with a savory filling and topped with melted cheese.
Ingredients

- 1/2 cup refried beans (120g)
- 3/4 cup Greek yogurt (170g)
- 1 tbsp taco seasoning
- 3 cups shredded chicken (280g)
- 1.5 cups shredded Mexican cheese (168g), divided
- 10 oz. can red enchilada sauce
- 8 flour tortillas (8-inch)
Instructions
- For the Filling: In a bowl, mix shredded chicken, refried beans, Greek yogurt, taco seasoning, and 1 cup of shredded cheese.
- For the Sauce: Spread a little enchilada sauce on the bottom of a baking dish.
- Assemble: Place a tortilla on a flat surface, add filling, roll tightly, and place seam-side down in the dish. Repeat.
- Top: Pour remaining enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
- Bake: Preheat oven to 350°F (175°C), bake for 20-25 minutes until cheese is bubbly.
