Description

Delicious Chicken Enchiladas wrapped in soft tortillas with a savory filling and topped with melted cheese.


Ingredients

  • 1/2 cup refried beans (120g)
  • 3/4 cup Greek yogurt (170g)
  • 1 tbsp taco seasoning
  • 3 cups shredded chicken (280g)
  • 1.5 cups shredded Mexican cheese (168g), divided
  • 10 oz. can red enchilada sauce
  • 8 flour tortillas (8-inch)

Instructions

  1. For the Filling: In a bowl, mix shredded chicken, refried beans, Greek yogurt, taco seasoning, and 1 cup of shredded cheese.
  2. For the Sauce: Spread a little enchilada sauce on the bottom of a baking dish.
  3. Assemble: Place a tortilla on a flat surface, add filling, roll tightly, and place seam-side down in the dish. Repeat.
  4. Top: Pour remaining enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
  5. Bake: Preheat oven to 350°F (175°C), bake for 20-25 minutes until cheese is bubbly.
